An excellent binder, it is a common thickener for sauces and stews, and creates baked goods with a moist, springy texture. Naturally gluten free, potato starch is a great alternative to cornstarch for those with corn allergies.
Usage:
1. To use as a thickener, first dissolve starch in a small amount of water to create a slurry, then add to sauce and stir until thickened. Potato starch loses its thickening ability when boiled, so it is best added near the end of cooking time in hot dishes.
2. Add to baked goods (especially gluten free) for better texture and binding.
