SHILOH FARMS Pumpkin Seeds are flat, light green seeds with a chewy texture and a subtly sweet flavor. High in protein and fiber, pumpkin seeds have a uniquely diverse antioxidant profile and are an excellent source of phosphorus, magnesium, manganese, zinc, iron, and copper. A perennial fall favorite, these seeds are so delicious and nutritious that they can be enjoyed throughout the whole year!
Pumpkins, and their seeds, were a celebrated food of the Native American Indians who treasured them both for their dietary and medicinal properties. The cultivation of pumpkins spread throughout the world when the European explorers, returning from their journeys, brought back many of the agricultural treasures of the New World. While pumpkin seeds are featured in the recipes of many cultures, they are a special hallmark of traditional Mexican cuisine.
To Roast: Coat seeds with melted butter or oil and salt to taste. Spread in single layer on a baking sheet. Bake at 300° for 35-45 minutes, stirring occasionally to keep the seeds from burning.
Variations: Use garlic salt, onion powder, cajun seasoning, or taco seasoning, in place of salt. For a sweet version, try a combination of cinnamon and maple sugar.
1. Add pumpkin seeds to sautéed vegetables.
2. Sprinkle pumpkin seeds on top of mixed green or fruit salads.
3. Grind pumpkin seeds with fresh garlic, parsley, and cilantro leaves. Mix with olive oil and lemon juice for a tasty salad dressing.
4. Stir pumpkin seeds into your favorite hot or cold cereal; sprinkle over yogurt.
5. Add pumpkin seeds to your oatmeal raisin cookies, granolas, or other baked goods.
6. Add ground pumpkin seeds to burgers or meatloaf.
Storage: For optimal shelf life, pumpkin seeds should be stored in a cool, dry place, such as the refrigerator or freezer.
