Quick-cooking and nutrient-dense, green split peas are a versatile and convenient source of protein, fiber, iron, and potassium. They have a sweet, earthy flavor and soft, creamy texture.
Directions: Sort and rinse. Bring 2 cups water and 1 cup peas to boil, reduce, and simmer, for 30-45 minutes, or until tender. Drain and serve.
