A staple in the Southern diet for over 300 years, black-eyed peas have long been associated with good luck and are traditionally served on New Year's Day.
To Cook: Sort and rinse peas. Cover 1 part peas with 2 parts water and bring to a boil over high heat. Reduce heat to low and simmer, covered, until peas are soft when pierced with fork, about 60-90 minutes.
1. Black-eyed peas are traditionally cooked with a ham hock or bacon for flavoring.
2. Their flavor is also greatly enhanced by garlic, tomatoes, onions, and vinegar.
3. The texture of these small beans blends well with bulgur or rice.
4. Black-eye peas are very nice added to salads of strong greens or tomato salads with lots of herbs.
