Sunflower seeds are one of the best natural sources of the important antioxidant Vitamin E. They are also mineral-rich (boasting significant levels of copper, manganese, selenium, phosphorus, and magnesium) and a great source of B Vitamins, especially thiamin (Vitamin B1). A single handful provides 7g of protein, 12% DV of dietary fiber, and a good amount of essential fatty acids.
Thought to have originated in Mexico and Peru, sunflowers were one of the first plants to have been cultivated in the United States. For over 5,000 years, Native Americans have not only relied upon the seeds as source of food and oil, but have also used the flowers, roots, and stems for varied purposes including as a dye pigment.
These sunflower seeds have been left completely unprocessed, with the "meat" of the seed still in the shell. Such seeds are normally eaten as a snack by cracking the shell with one's teeth, discarding the hull, and eating the delicious morsel within. Alternately, to de-hull in-shell sunflower seeds, put a small amount into a food processor and pulse in quick bursts just until the shells begin to separate but not too many seeds are crushed. Then plunge the seeds into cold water to separate them from the shells.
Suggestions:
1. Soak seeds overnight in salted water. Drain, allow to dry, then roast in 300° oven 30-40 minutes, or until crisp. Add salt and seasonings as desired.
2. To remove shells, pulse in food processor, then cover with water. Shells will rise to top, allowing you to skim them off. Drain and allow kernels to dry.
3. Sprinkle kernels over salads, yogurt, or cereal.
4. Grind hulled seeds and add to breadings or coatings for meat.
5. Combine kernels with your favorite nuts and dried fruits for a yummy granola or trail mix.
6. Mix hulled seeds into breads, granola bars, cookies, or other baked goods.
7. Make a seed butter by processing kernels in food processor until a thick paste forms. Sweeten with honey or other natural sweetener.
Storage: Due to their oil content, sunflower seeds are extremely perishable and care should be taken in their storage. To maximize shelf life, we recommend storing seeds in an airtight container in your refrigerator or freezer.
