Protein- and fiber-rich SHILOH FARMS Pinto Beans are a particularly good source of potassium, magnesium, iron, & folate (Vitamin B9). Named for their distinctive, speckled skin ("pinto" is Spanish for "speckled" or "painted"), pinto beans take on a rosy-pink color and creamy texture when cooked. They are among the most popular and widely-consumed beans in the United States and Mexico.
Pinto beans are cousins of kidney beans, navy beans, black turtle beans and several other varieties (collectively known as "common beans") thought to have originated in Central America.
To Cook: Sort and rinse. Add 1 part beans to 3 parts water and soak overnight. Drain well, then cover beans with fresh water or stock (again at 1:3 ratio). Bring to a boil, reduce, and simmer for about 1-1½ hours, or until soft.
*Cold soaked and cooked at a very gentle simmer, beans should retain most of their nutrients.
Suggestions:
1. Pair with rice or another whole grain for complete, high-quality plant-protein.
2. Traditionally used in refried beans, chili con carne, burritos, & other Southwestern & Mexican dishes.
3. Substitute for black beans or kidney beans in soups, stews, or chili.
4. Mash beans & blend with garlic, pepper, & fresh herbs for a delicious dip or spread.

I don't eat a lot of animal protein as my digestive system does not handle it well, so I depend highly on legumes for my protein (I don't tolerate a ton of nuts or dairy either). I'm a member of Thrive Market and have a Sprouts, Trader Joes, and Mother's Market all within driving distance. Most of the time, the only organic beans I see for sale are garbanzos, kidneys, and black beans. I was very happy to find organic pinto beans here as it's just nice to have variety of taste and nutrition. The price here on Gluten Free Mall is excellent as well. Will be buy again in the future.
