SHILOH FARMS Organic Navy Beans are petite, oval, creamy-white beans with a mild flavor and dense, smooth texture. They are extremely versatile and are a welcome, and healthy, addition to a variety of dishes.

As with most legumes, navy beans are typically high in protein and fiber. They are also rich in vitamins and minerals, in particular folate, manganese, phosphorus, copper, & Vitamin B1. 

While popularly known as navy beans (dubbed such because they were a staple ration of the U.S. Navy in the late 19th Century), these small white legumes are also called by a number of other names including haricot beans, Boston beans, pea beans, and Yankee beans. Navy beans are often confused for their larger cousins Great Northern and cannellini beans, a mix-up further compounded by the fact that they are often used interchangeably in recipes. 

To Cook: Sort and rinse beans. Add 1 part navy beans to 3 parts boiling water. Remove from heat, cover, and allow the beans to soak overnight. Drain and add 3 parts fresh water or stock (make sure the beans are completely covered by the liquid). Cover and bring to a boil, then reduce to simmer for about 2 hours, or until beans are softened to your liking. Drain and save excess cooking liquid for soup stocks. Season beans with salt, pepper, or other desired spices and serve. 

Test frequently during cooking, then come to your own decision on when beans are tender and taste "done." Remember, intended use dictates desired tenderness. It is better to cook beans to a firm stage for salads, freezing, and longer-cooking recipes. If you plan to puree or mash the beans, cook until very soft.

Suggestions:
1. Add navy beans to soups, stews, casseroles, and salads.
2. Common uses include baked beans, pork and beans, and minestrone soup.
3. Cook with smoked meats and tomatoes for added flavor.
4. Substitute for Great Northern Beans, cannellini beans, and lima beans.
5. Puree and use to thicken soups and stews.
6. Serve with whole grains, like brown rice, for high quality plant protein on par with that found in meats and dairy.
