To Rehydrate: Cover fruit with water or juice and simmer 15 minutes, or until fruit has absorbed liquid and is plump to touch. Drain.
Chop and sprinkle over yogurt or cottage cheese
Stew and puree for a flavorful topping to toast, ice cream, or even roast chicken
Add to rice, couscous or bulgur pilaf
*Some pit pieces may remain in fruit.
