With their nutty, sweet flavor, adzuki beans are a versatile and healthy addition to both sweet and savory dishes. An excellent source of protein, they are particularly rich in iron, magnesium, and folic acid.
Directions: Sort and rinse. Cover with water and soak overnight. Drain. Bring 2 cups water and 1 cup beans to boil, reduce, and simmer 1 hour, or until tender. Drain and serve.
Grind into flour to be added to baked goods
Cook with rice, millet, quinoa, or other grains
Balance foods with soy sauce, ginger or miso
