Petite with an eye-catching bright green skin, mung beans are an exceptionally nutritious, versatile legume rich in protein potassium, magnesium, iron, and B Vitamins.
Directions: Sort and rinse. Bring 3 cups water and 1 cup beans to boil, reduce, and simmer for 45-60 minutes, or until tender. Drain and serve.
Suggested Uses:
Use in place for lentils for soups, stews and curries
Grind raw beans into flour and add to baked goods to boost protein and fiber
Mash beans and use to thicken sauces and gravies
