Milled from the ancient teff grain, SHILOH FARMS Domestic Teff Flour is a whole grain flour high in protein, carbohydrates, and fiber. Rich in flavor with a subtle notes of hazelnut and chocolate, teff is like the more exotic cousin of millet.

Containing all 8 essential amino acids (the building blocks of the human body), teff's protein is high quality, like milk or meat. It is also rich in calcium and iron and, though having a slight, molasses-like sweetness, teff actually has no sugar content. Because the tiny teff grain is too small to hull, it can't be refined or lose its nutritional value. 

Suggestions:
1. Experiment with substituting teff flour for part of the flour in baked goods.
2. Because of its delicate sweetness, teff flour is especially good in pancakes, sweet breads, cakes, tarts, and pastries.
3. Teff Flour is also an excellent thickener for soups, sauces, stews, gravies, and puddings.
