One of the earliest domesticated food crops, teff has been a staple of Ethiopian and other East African diets for thousands of years. Nowadays, its great flavor, versatility, and impressive nutritional profile have made this tiny grain highly sought-after around the world. With a subtle sweetness similar to millet, SHILOH FARMS Ivory Teff has a milder flavor than brown teff, but is equally nutritious.
Teff is a whole grain high in fiber, iron, and protein. In fact, it contains all 8 essential amino acids, meaning its protein is high quality, on par with milk or meat. Naturally gluten free, teff is also rich in calcium, containing higher levels of this important nutrient than any other grain. Because the grain is so small, teff cannot be hulled or refined; it is almost completely composed of germ and bran.
In cooking, teff has very similar applications to millet or quinoa; however, due to its small size, it cooks much more quickly.
To Cook: Add 1 cup of teff grain to 3 cups of water and bring to a boil. Reduce and simmer, covered, for 15 to 20 minutes, or until water is absorbed. Stir and let stand, uncovered, for an additional 5 minutes. Season to taste.
Suggestions:
1. For extra flavor, lightly toast grain before cooking.
2. Teff grain can be eaten alone as a hot cereal or polenta.
3. Raise the nutritional profile of breads, cookies, and other baked goods by adding a little teff to the batter.
4. Cook teff with other grains and vegetables for delicious pilafs or stuffings, or add to stews.
