Protein-rich Pinto Beans are an excellent source of potassium, magnesium, and folate. Named for their distinctive speckled skin, they take on a rosy-pink color and creamy texture when cooked.
Directions: Sort and rinse. Cover with water and soak overnight. Drain. Bring 3 cups water and 1 cup beans to boil, reduce, and simmer 1-1½ hours, or until tender. Drain and serve.
Suggested Uses:
Sub for kidney or black beans in soups and salads
Traditional in refried beans and chili con carne
Pair with whole grains for complete plant-protein
