Millet is one of the least allergenic and easily digestible grains available. It is high in B vitamins copper, and iron. Used in a combination of legumes, seeds, and dairy products, it provides a balance of protein to your meals. Millet can be used as a cereal, in casseroles, breads, stews, puddings, or stuffing for vegetables or meats.
To Cook: Bring 2 parts of water to a boil and stir in 1 part millet; cover and simmer about 35 - 40 minutes, or until the water is absorbed.
