Instantly recognizable by their distinctive flat-oval shape and pale green hue, SHILOH FARMS Baby Lima Beans are delicately flavored, with a mild earthiness that complements a wide variety of dishes. When cooked, they develop a creamy, buttery texture (hence them occasionally being referred to as "butter beans") that is at once comforting and slightly indulgent. But don't be fooled - these little green beans are about as healthy as they come!
Virtually fat-free and low in calories, lima beans are an excellent source of fiber and plant protein. They are also rich in a variety of essential vitamins and minerals, like copper, manganese, iron, potassium, and folate (Vitamin B9). Of particular note, lima beans are exceptionally high in molybdenum, a trace mineral that plays a key role in detoxifying sulfites (preservatives commonly added to prepared foods that can have adverse health effects).
Lima beans originated in the Andes region of South America and are named for the capital of Peru, where they have been cultivated for over 4,000 years.
To Cook: Sort and rinse beans. Add 1 part lima beans to 3 parts boiling water. Remove from heat, cover, and allow the beans to soak overnight. Drain and add 3 parts fresh water or stock (make sure the beans are completely covered by the liquid). Cover and bring to a boil, then reduce to simmer for about 2 hours, or until beans are softened to your liking. Drain and save excess cooking liquid for soup stocks. Season beans with salt, pepper, or other desired spices and serve.
Test frequently during cooking, then come to your own decision on when beans are tender and taste "done." Remember, intended use dictates desired tenderness. It is better to cook beans to a firm stage for salads, freezing, and longer-cooking recipes. If you plan to puree or mash the beans, cook until very soft.
1. Mix with corn and garlic to make succotash. Tailor it to your taste by adding your favorite seasonal vegetables and herbs.
2. Add to soups, stews, and casseroles.
3. Mash cooked beans with butter as an alternative to mashed potatoes.
4. The buttery-ness of lima beans pairs well with smoked meats, like bacon.
5. Puree beans with fresh herbs and seasonings to make a sandwich spread or dip.
6. Serve with whole grains, like brown rice, for complete plant protein comparable to that of meat or dairy.
